Turtle Soup
| ½ cup
cooking oil |
2 bay leaves |
| 1 cup flour |
salt and pepper to
taste |
| 3 large
chopped onions |
2-3 lbs. turtle
meat |
| 1 small can
stewed tomatoes |
¾ gallons water |
| 1 cup
chopped celery |
6 finely chopped
hard boiled eggs |
| ¼ cup
chopped green onions |
1 large glass
sherry or Madeira wine |

Make a roux with oil and flour. Add onions and brown. Add small amounts of
water if need so that onions do not burn. Puree tomatoes in blender and add
to roux. Smother mixture until thick and rich, reddish-brown in color, adding
small amounts of water as needed. Add celery, green onions, bay leaves, salt
and pepper and cook until vegetables are wilted. Carefully add meat and water
to sauce and cook about 20 minutes until brown and meat is done. Add eggs on
top. Add wine. Serve immediately. |
