Swedish Crawfish (recipe from one of our customers, Margaretha Olivecrona)
12 Cups Water4 1/2 tsp dried dill seeds
Between 1/3 and 1/2 cups Coarse SaltLots (I mean lots) of fresh dill
1 Tbsp Sugar6 tsp cumin (caraway)
Fill up with as much water so it will cover the crawfish. Let the water, dill, sugar, etc. boil for at least 10 minutes. Put in the crawfish and when water boils again let them boil for about 7 minutes. For the 20 lbs. I may put in a couple of cans of any kind of beer after I have moved the pot from the heat. Leave the crawfish in this and refrigerate a day or 2 and eat them cold. Don't remove them from the water! Good Luck and don't forget that these animals go with Swedish Aquavit!!
