Crawfish Stew
Oil 2 cloves chopped garlic
2 Tablespoons flour 1 lb. crawfish tails
2 chopped onions 1 quart water
2 chopped celery stalks salt, black and red pepper to taste
˝ cup chopped green pepper 3 hard-boiled eggs

Make a roux with oil and flour (stir ingredients on medium heat until med/dark brown) in large pot.  Add onions, celery, green pepper and garlic and sauté until wilted on low fire.  Add crawfish and sauté.  Add 1 quart water and seasonings; cook until thick.  Turn off heat and add the boiled eggs which have been cut in half.  Pour over cooked rice and serve.  4-6 servings
