Crawfish Stew

2 cloves
chopped garlic |

Tablespoons flour |
1 lb.
crawfish tails |

chopped onions |
1 quart
water |
| 2
chopped celery stalks |
salt, black
and red pepper to taste |
| ˝ cup
chopped green pepper |

hard-boiled eggs |

Make a roux with oil and flour (stir ingredients on medium heat
until med/dark brown) in large pot. Add onions, celery, green pepper and
garlic and sauté until wilted on low fire. Add crawfish and sauté. Add 1
quart water and seasonings; cook until thick. Turn off heat and add the
boiled eggs which have been cut in half. Pour over cooked rice and serve.
