Crawfish Sizzlers
| 1 lb. Louisiana
crawfish tailmeat |
1 T. medium-dry
sherry |
| 1/4 c. coarsely
grated Cheddar or Monterey Jack cheese |
2 T. minced green
onion |
| 2 T. grated
fresh Parmesan cheese |
12-14 slices thin, homemade-style
white bread, crusts discarded |
| 1/4 c. heavy
cream |
1/2 stick unsalted
butter, melted |

Drain crawfish in a colander. Pat dry and chop fine. In a bowl,
stir together cheeses, cream, sherry and green onion. With a rolling pin,
flatten each bread slice into a 3 1/2" square. Spread about 2 T. crawfish
mixture on each bread slice and roll up tightly. Put rolls, seam sides down,
on a baking sheet and brush all over with butter. Chill rolls, covered
loosely, at least 1 hour and up to 4. Preheat oven to 425 degrees. Cut
crawfish rolls in half and arrange on baking sheet, seam sides down. Bake
until golden, about 12 minutes, and cool slightly. Serve warm. Makes 24-28
hors d'oeuvres. |
