Red Beans & Rice
1/4 cup vegetable oil 1 lb. sliced smoked sausage
1-2 chopped onions 1 lb. red beans

Saute onions in heated vegetable oil until tender.  Add sausage and cook about 15 minutes.  Add beans.  Pour in water until beans are covered by an inch.  Boil beans until beans are soft.  Serve over cooked rice.
