Crawfish Pie
| 2 cups
crawfish tails |
¼ cup minced
celery |
| 1 bay
leaf |
¼ cup minced
parsley |

stick butter |
salt and red
pepper |

tablespoons flour |
prepared pie
crusts |

large minced onion | |

Cook crawfish tails with bay leaf in 2 cups water for 15
minutes. Remove from fire and drain, reserving water. Chop crawfish very
fine (or place in blender of food processor). Melt butter and brown flour
until golden brown. Add onion and celery and half of the reserved water.
Cook until soft. Add crawfish and parsley. Season to taste and add enough of
reserved water to achieve desired consistency (creamy). Put mixture into
prepared pie crust. Bake according to pie crust directions. May also use
individual serving crusts. |
