Crawfish Stuffed Bell
Peppers
| 2 lbs.
crawfish tails, peeled |
3 Tbsp. parsley,
chopped |
| 1 onion |
salt and pepper
to taste |
| ½ bell
pepper |
2 cups seasoned
bread crumbs |
| 3 cloves
garlic |
4-6 bell
peppers, whole (for stuffing) |
| 3 slices
stale bread |
paprika |
| 2-3 eggs,
beaten |
margarine |

In
food processor, grind crawfish tails, onion, ½ bell pepper, garlic and stale
bread. Mix in large bowl, add beaten eggs, parsley, salt, pepper and bread
crumbs. Mix well. Clean and hull bell peppers, then parboil. Stuff crawfish
mixture in bell peppers. Top with a little bread crumbs, paprika and dot with
margarine. Place in a greased casserole dish. Bake at 350 degrees for 30-35
minutes. |
