Oyster Dressing
| 5 chicken livers | 15 springs finely
chopped shallots |
| 30 chicken gizzards | 2 med. finely
chopped onions |
| 4 cups cooked rice | 1 small stale French
bread (soaked & drained) |
| 5-6 doz. oysters (reserve water) | 15
springs parsley |
| 1 cup corn oil | 1 block butter |
| 1 stalk finely chopped celery | |

Boil livers and gizzards; save liquid.
Grind livers and gizzards and cut up oysters. Saute' celery, shallots,
and onions in corn oil. Add bread and simmer. Add
oysters, oyster water, gizzards and livers; simmer about 10 minutes. Add
parsley, butter and a little gizzard water. Simmer 10 minutes. Add
cooked rice. Simmer covered for 30 minutes. |
