Oyster Dressing
5 chicken livers15 springs finely chopped shallots
30 chicken gizzards2 med. finely chopped onions
4 cups cooked rice1 small stale French bread (soaked & drained)
5-6 doz. oysters (reserve water)15 springs parsley
1 cup corn oil1 block butter
1 stalk finely chopped celery 

Boil livers and gizzards; save liquid.  Grind livers and gizzards and cut up oysters.  Saute' celery, shallots, and onions in corn oil.    Add bread and simmer.  Add oysters, oyster water, gizzards and livers; simmer about 10 minutes. Add parsley, butter and a little gizzard water.  Simmer 10 minutes.  Add cooked rice.  Simmer covered for 30 minutes.
