Crawfish Omelet
| 1 lb.
Crawfish tails |
½ cup
chopped parsley |
| 1
stick butter |
8 eggs |
| ½ cup
chopped green onions |
salt and
pepper to taste |

clove crushed garlic |
½ teaspoon
Worcestershire sauce |

Fry crawfish tails in butter on low heat until tender. Add
onion, garlic and parsley. Beat eggs and season with salt, pepper and
Worcestershire. Pour over crawfish, stirring gently. When set, turn on a
heated platter. Serve immediately. |
