Crawfish Stuffed Mushrooms
| 1 lb.
Large mushrooms |
½ cup crawfish
tails |
| 2
tablespoons butter |
1 slice bread,
soaked in milk |
| 2
tablespoons finely chopped onion |
salt & pepper to
taste |
| 1 clove
chopped garlic |
butter |
| 1 teaspoon
chopped fresh parsley | |

Wash and clean mushrooms. Remove stems and chop fine. Melt butter; add
onion, garlic, parsley, crawfish and chopped mushroom stems. Cook over medium
heat for 2 minutes until moisture has evaporated. Squeeze milk out of bread
and add to mixture. Season to taste. Stuff mushroom caps with mixture. Dot
with butter and set in buttered baking dish. Bake at 400 degrees for 12-15
minutes. |
