Crawfish Jambalaya
| ½ cup oil |
2 cups uncooked rice |
| 2 large diced onions |
1 tablespoon chopped garlic |
| 1 cup smoked sausage |
1 tablespoon chopped parsley |
| 1 lb. crawfish or shrimp
tails |
1 tablespoon
chopped green onions |
| 2 - 8 oz.
cans tomato sauce | |

In
large pot, heat oil and onions. Cook till tender. Add sausage and fry 3
minutes. Add crawfish or shrimp and fry 15 minutes. Add tomato sauce and cook 15
minutes. Add rice and cook 20 minutes. Add water till it covers 1 inch above
ingredients. Season to taste and bring to a boil; stir and cover. Cook over
low heat 25-30 minutes, stirring occasionally. After cooked, stir in garlic,
parsley and green onions. Let stand 5 minutes and serve. 6-8 servings. |
