Alligator Meatballs
| 1 lb. Finely
chopped alligator meat |
2 teaspoon lemon
pepper |
| 1 egg |
½ teaspoon salt |
| 1 tablespoon
finely chopped onion |
¼ cup bread crumbs |
| 2
tablespoons finely chopped celery |
flour to dredge |
| 1 tablespoon
finely chopped parsley |
1 cup cooking oil |
| 2
tablespoons chopped green onions | |

Combine all ingredients except flour and cooking oil and form into 1 inch
balls. Allow to set for 1 hour. Roll each ball in flour to cover thoroughly
and fry in cooking oil until brown. |
