Alligator Sausage Crawfish
Casserole
| 1 lb. alligator
sausage |
1 bunch green onions,
chopped |

1 lb. Louisiana crawfish tailmeat |
1 lb. fresh
mushrooms, sliced |
| 1 lb. smoked
sausage, sliced |
2 T. minced garlic or
to taste |
| 2 c. converted
long grain rice |
2 bay leaves |
| 1 10-oz. can
Ro-Tel tomatoes |
1 T. Creole seasoning |
| 1 can onion
soup |
1 T. black pepper |
| 1 can beef
broth |
1/4 lb. butter or
margarine |

Crumble alligator sausage, brown and drain. Combine with
remaining ingredients in a large covered casserole or pan and cook in a
preheated 350 degree oven for 30 minutes. Stir well and continue cooking an
additional 30 minutes. Let cool, uncovered, for a few minutes and serve.
