Alligator Sausage Crawfish Casserole
1 lb. alligator sausage 1 bunch green onions, chopped

1 lb. Louisiana crawfish tailmeat

1 lb. fresh mushrooms, sliced
1 lb. smoked sausage, sliced  2 T. minced garlic or to taste
2 c. converted long grain rice 2 bay leaves
1 10-oz. can Ro-Tel tomatoes  1 T. Creole seasoning
1 can onion soup   1 T. black pepper
1 can beef broth  1/4 lb. butter or margarine

Crumble alligator sausage, brown and drain. Combine with remaining ingredients in a large covered casserole or pan and cook in a preheated 350 degree oven for 30 minutes. Stir well and continue cooking an additional 30 minutes. Let cool, uncovered, for a few minutes and serve. Serves 10-12.
