Crawfish & Tasso Fettuccini
3 tablespoons butter 1 teaspoon dried thyme
3 minced garlic cloves ¼ teaspoon cayenne pepper
3 oz. Tasso ¼ teaspoon black pepper
1 cup chopped green onions ¼ teaspoon salt
1 medium chopped bell pepper 1 lb. Crawfish tails
3 tablespoons flour ½ cup Parmesan cheese
2 cups whipping cream 12 oz. Cooked fettuccini
1 teaspoon dried oregano 
Sauté garlic in butter until soft.  Stir in tasso, green onions and bell pepper.  Sauté 5 minutes.  Add flour; gradually add cream.  Add seasonings.  Bring to a boil; cook 1 minute until thickened.  Add crawfish tails; stir just until heated.  Pour over pasta.  Sprinkle with cheese.  Serve immediately.
