Crawfish & Tasso Fettuccini

tablespoons butter |
1 teaspoon
dried thyme |

minced garlic cloves |
¼ teaspoon
cayenne pepper |

Tasso |
¼ teaspoon
black pepper |
| 1 cup
chopped green onions |
¼ teaspoon
salt |

medium chopped bell pepper |
1 lb.
Crawfish tails |
| 3
tablespoons flour |
½ cup
Parmesan cheese |
| 2 cups
whipping cream |
12 oz.
Cooked fettuccini |
| 1
teaspoon dried oregano | |

Sauté garlic in butter until soft. Stir in tasso, green onions
and bell pepper. Sauté 5 minutes. Add flour; gradually add cream. Add
seasonings. Bring to a boil; cook 1 minute until thickened. Add crawfish
tails; stir just until heated. Pour over pasta. Sprinkle with cheese. Serve
immediately. |
