Crawfish Etouffee
½ cup butter 10 ½ oz. Can cream of mushroom soup
1 medium chopped bell pepper ½ cup chopped parsley
4 medium chopped onions ½ cup chopped shallots (green onion tops)
1 lb. Crawfish with fat (separated) 1 tsp red pepper (optional)
¼ cup ketchup Cooked rice
3 cups water 

Melt butter; sauté bell pepper, onion, crawfish fat and ketchup.  Add 1 cup water and cook 20 minutes over medium heat.  Add soup, crawfish, parsley and shallots; season to taste with red pepper.  Add remaining water and cook 45 minutes until gravy thickens.  Serve over cooked rice.
