Dirty Rice (Rice Dressing)
| 1 cup uncooked rice |
1 finely chopped green onion |
| 2 cups water |
1/4 cup vegetable oil |
| 1 medium finely chopped onion |
1 lb. ground meat |
| 1/4 finely chopped bell pepper |
salt, pepper, Cajun seasoning |
| 1/2 finely chopped celery stalk |
1/2 cup canned beef gravy |
| 1 tsp finely chopped parsley |

Cook rice in
water until done. Set aside. Mix onion, bell pepper, celery,
parsley, and green onion together. Saute in oil. Add ground meat,
salt, pepper, Cajun seasoning and cook until meat is thoroughly cooked.
Drain fat. Mix meat with rice. Add gravy and mix thoroughly. |
