Crawfish Macque Choux
| 1 lg. onion,
chopped |
1 can cream style
corn |
| 1 green bell
pepper, chopped |
1 can Ro-Tel
tomatoes, chopped |
| 1/2 c. chopped
green onions |
1 lb. Louisiana
crawfish tailmeat |
| 1 stick
butter |
Salt & pepper to
taste |
| 2 cans whole
kernel corn, drained | |

Sauté onion, bell pepper and green onions in butter. Add corn
and tomatoes. Simmer for 5 minutes. Add crawfish and seasonings and simmer for
20-30 minutes. Serves 8 |
