Crawfish Bayou Salad

1/2 c. diced green
bell pepper |
| 2 c. cooked
rice |
1/2 c. Italian salad
dressing |
| 1 c. diced
celery |
Lettuce leaves |
| 1/2 c.
quartered cherry tomatoes |
Whole boiled crawfish
for garnish |
| 1/3 c. sliced

Combine first crawfish tailmeat, rice, celery, tomatoes,
olives, bell pepper and dressing; mix well. Serve on a bed of lettuce on
individual salad plates garnished with whole crawfish. Serves 6. |
